Menu Plan Monday

Pardon our absence last week. We took a little trip down to Alabama to see my family and had the best time. We got back on Monday afternoon, so the rest of the week was spent playing catch-up on laundry, chores, and play dates. 

I love being so close to Alabama now because it means that I can drive down for the weekend and spend time with my brother and his family, grandparents, aunts, uncles, and high school/college girlfriends. Many of these precious folks missed the first part of William's life, and missed out on getting to know Nathan too since we were all the way in NY when we first got married, so it's like we're making up for lost time. But it's just as comfortable as if we'd never left. I love that about family and good friends, don't you?

Monday -Three Cheese Ziti, Grilled Asparagus, garlic breadsticks

Tuesday - Oven Baked Chicken Fajitas, Rice and Beans
  • William's menu: (b'fast) - hardboiled eggs, turkey sausage, fruit
  • (lunch) - Leftover Ziti from Monday, Leftover Asparagus from Monday, Fruit

Wednesday - Pizza and Wings 
  • William's menu: (b'fast) - Pancakes, Fruit
  • (lunch) - Leftover Rice and Beans from Tuesday, Cheese Quesadilla 

Thursday - Grilled Pork Chops, Veggies
  • William's menu: (b'fast) - Scrambled Eggs, Toast Sticks, Fruit
  • (lunch) - Mini Tuna Balls, Cheese, Fruit

Friday - Crockpot Chili 
  • William's menu: (b'fast) - Veggie Omelette (using leftover veggies), Fruit
  • (lunch) -  Apple Chicken Nuggets (freezer), steamed sweet peas, fruit

Saturday - Leftovers

  2. What a treasure to have William and his great-grandparents. You'll love having those pictures later! When you come over to the west, stop in Memphis and see us! :) The girls would love little William!!!

  3. So fun! I"m so glad you get to see your family so often now! What a joy!

    And I love seeing how big William is getting! It's amazing and goes so stinking fast!

    Also, totally making that oven-baked chicken fajita recipe this week. Looks yummy!
