Menu Plan Monday + Toddler Menu Plan


I'm so happy to be menu planning again! We've been doing a "rough" menu plan for the past several weeks since we moved in - i.e. whatever we could scrounge in the pantry/freezer/fridge to eat. It took us a few weeks and couponing to get our basics and stock up, but now we're finally feeling settled in (in the food department) and feeling more prepared to menu plan!

I found a great local grocer here in town that does a 5 meats for $17.44 deal, so we stocked up on some nice variety cuts of meat last week - Boston Butt, Chicken Leg Quarters, Chicken Thighs, Pork Chops, and a Roast. We typically never buy "fancy" meat like that (we pretty much stick to chicken and the occasional pork chop and/or pound of ground beef), so I'm excited about the endless possibilities! Now if I could just remember which box I put my Crock Pot in. ;)

Here's what we're planning to eat this week (I've also included William's breakfast and lunch menu as well - he's pretty much eating whatever we have for dinner):

Monday - (leftover) Braised Chicken Leg Quarters with Rice and Veggies (I made this on Saturday night and it was a huge hit!)
Tuesday - Cheeseburger Casserole (new), salads, garlic bread
  • William's menu: (b'fast) - scrambled eggs, toast sticks, strawberries/banana
  • (lunch) - roasted sweet potato, turkey, cheese cubes, applesauce 
Wednesday - simple supper: Egg Salad BLT Sandwiches (William will prob. just have hard boiled eggs), fruit 
  • William's menu: (b'fast) - plums/strawberries and oatmeal, yogurt 
  • (lunch) - peanut butter and jelly, broccoli, strawberries
Thursday - Leftovers
Friday - Crock Pot Pulled Pork, Roasted garlic potatoes (new recipe), salads
  • William's menu: (b'fast) - veggie omelette, strawberries
  • (lunch) - black beans, turkey, avocado 
Saturday - Pulled Pork Sandwiches (using leftover pork), french fries, fruit
  • William's menu: (b'fast) - french toast sticks, banana, yogurt
  • (lunch) - potato gnocchi, broccoli, plums

  2. Welcome back :) You know... pulled pork on top of sweet potato is quite amazing, just a thought!

    William's eats look yummy too -- fun to see what he's enjoying these days.
