Menu Plan Monday




Hey Friends!

We are officially 10 (ten!!) days out from our big move to TN, and trust me when I say things have been crazy the last few weeks. These are the times when I wish there were two of me - one of me to actually pack the stuff that needs packing, and one of me to wrangle the baby that keeps unpacking all of the stuff that has been packed. What a joyous time for baby boy to learn how to crawl and explore (note the sarcasm). And of course, with a billion boxes everywhere there is no distracting him with his fancy toys that have lights! and sounds! No sirree. Cardboard boxes are far more interesting. ;)

We're working around the clock trying to pack up boxes, sell things we don't want to take with us, and wrap things up with our realtor. And while we're at it, we're also trying desperately to eat down everything in our freezer and fridge so that nothing will be wasted. Which leads me right to our menu plan for this week....boring and easy, but essential. I'm also posting William's finger food lunch in here because that worked out so well for me last week! 

Monday - Monterey Chicken with Rice and Veggies


Tuesday - Out to dinner w/ friends (Nathan will prob. have something super easy and/or leftovers)


  • William's finger food lunch - 


Wednesday - Crock Pot Pineapple Chicken OR Barbecue Pineapple Chicken


  • William's finger food lunch - Pasta with Carrots (I just buy the star-shaped pasta and cook and add smashed carrots - he loves it!), Applesauce 


Thursday - Clean out the Pantry Night (I may just make some rice, and a plethora of mixed veggies here to help us eat down some of our food)


  • William's finger food lunch - Quesadilla Strips using chicken from the night before


Friday - Corn Dogs, Mac and Cheese, No Fry Fries (easy peasy!)


  • William's finger food lunch - Ham, Carrots, Applesauce


Saturday - Tuscan Garlic Chicken, Veggies, Garlic Breadsticks


  • William's finger food lunch - Sweet Potato, Banana Muffins (I made these this weekend and froze them - they are SO good!), Pears

  1. YOu always inspire me with your menu! Does William eat your dinner with you? Just curious. We try to feed Henry what we eat, but sometimes it's too spicy or he's just not interested.
