Menu Plan Monday - Week of Mar. 19

This week we've got ourselves a little personal kitchen challenge: cook as many meals without meat as we possibly can. Why? Because I'm bound and determined to stay within our grocery budget and we're all out of chicken, almost out of beef, and there isn't a fish in sight. Since April is still a few weeks out, I'm stretching what we have and trying to be creative with our meals this week. Here's hoping it works!

Monday - Leftover Tex Mex Chicken Skillet (we made this Sunday and it was sooo yummy!)

Tuesday - {Meat Free} Potato, Egg and Cheese Taquitos 

Thursday - Leftovers

Friday -  {Meat Free} Cheesy Orzo w/ Steamed Vegetables

Saturday- {Meat Free} Mexican Pizzas


  1. Sounds like a really delicious almost meatless menu plan. I love black beans so I'm thinking those Mexican Pizzas made with mashed black beans would be really tasty. Thanks for the inspiration.
