Menu Plan Monday - Week of Mar. 26

Menu Plan Monday is hosted at Organizing Junkie - stop by for hundreds of menus

Last week, we did really well sticking to our (mostly) meat free menu. Of course, with temperatures in the 70's and 80's, it wasn't hard to do that! We even switched it up one night and made egg salad sandwiches and ate them alongside some fresh fruit. We even ate them outside on our deck! It was wonderful.

This week, temperatures are back down to 40's and 50's so we're breaking out some colder weather recipes (I'm hoping this might be the last time, but that's probably wishful thinking!).

Monday - On Your Own

Wednesday - Pot Roast Sliders (I'm not using the 3-envelope recipe since our Roast will be leftover, but I am using this method to create the sandwiches)

Friday - Leftover Night (if we still have roast left, then I'll probably whip up these yummy Pot Roast Nachos!)

Saturday - If it's warm enough, we'll grill some Pork Chops and serve it alongside this delicious Pineapple Fried Rice from PW.
