Week/end Recap + Aug. 8 Menu Plan

**This is the last week to enter my Pangea Handmade giveaway! One lucky reader will win the Eternal Rose Necklace from the artistic Angie Haugland of Pangea Handmade.**

I showed a few pictures last week of the fun we had while my brother, his wife and their 3 kiddos were in town with us. While they were here we enjoyed a game of mini golf (paired with some ice cream, of course), shopping at the Goodwill, board games, yummy grilled food prepared by my dad, and my most favorite thing of all...stealing my sister-in-law and the 3 kiddos on Thursday and having them all to myself for a few hours of fun!

I took them to a local park by our house and then to the humane society to see the farm animals, dogs and cats. They had a blast visiting the different animals, and even got the chance to pet a few of them too!

The oldest and the middle child petting a horse

The biggest cow I've ever seen. The picture just doesn't do it justice.

The middle and youngest child enamored by the geese.

This little guy was into the animals. Every time we saw a new one, he would squeal, "Awwww! They're so cute!!" :)

I am so, so thankful that I got a day with these 3 sweet ones and my sister-in-law all to myself. It was especially sad to see them go at the end of the week. The kids are at that fun age when their little personalities are really starting to shine, and I hate I'm not closer to relish in it, but I'm thankful. Thankful that they drove an extra 10 hours just to see us for a few days. Thankful that my brother and sister-in-law are doing so well raising their 3 kids. Thankful that we got to spend time laughing, joking and relaxing together.

Last week, we did exceptionally well sticking to our menu plan. The stars of the show were three new recipes we tried....

Pretzel Chicken w/ Cheddar Mustard Sauce {recipe: here}

Tostada Pizza {recipe: coming soon!}

And, Eggplant Parmesan {recipe: coming soon!}

Here's hoping we have the same success this week!

Monday -- Small group ~ Simple Supper

Tuesday -- Creamy Chicken Taquitos w/ Rice

Wednesday -- {Meat Free} Pesto Ravioli w/ Side Salads

Thursday -- Leftover Night

Friday -- Egg Salad Sandwiches w/ Fruit

  2. When you have your small group, what do you usually make?

  3. @Ginny - Our small group just "snacks", so we each have dinner at our own places before we come. I try to keep it simple on Monday's so we aren't rushing around before we have to leave.

    The pretzel chicken looks AMAZING! I'm definitely going to try that one very soon.
